You know how all human bodies are different and valid? The same goes for animal bodies, and thus, the cuts of meat they produce. It’s an interesting thing that we have come to expect uniformity in our cuts of meat. It’s almost like having one standard of beauty, teaching to one type of student or celebrating one version of romantic love. We work with nature and celebrate diversity. Our pork chops vary a bit from one group of pigs to the next, but the flavor will be consistently good because their lives are consistently good.
